However ovens will also be needed as will refrigeration and lighting so a mobile generator is almost certainly required.  Ample running water supply will need to be available, in the case of Asian catering the cooking of fresh rice will require water as well as the usual teas, coffees and general cleaning up.  Good Indian catering companies will transport food in cold storage vehicles which will need to be powered when standstill, these can be used to chill beverages also.  The provision of power and running water and protection from the weather are essential for catering companies working in marquees.

The provision of cutlery, crockery, glassware and linen will usually be the caterers’ responsibility while the actual tables and chairs will be supplied by the marquee hire company.  On site meetings are important to ensure all suppliers know their specific responsibilities and guarantee success on the day.
